So, my friend Nicci-Grace had her birthday this week, and what better excuse for a tea party! I was given the honour of baking the birthday cake, since the last one didn’t kill anyone.
Having searched for some suitable Pinspiration, I set to work and this was the result…
…and I’m pleased to say it went down pretty well!
The method is simple:
- Bake your sandwich cake of choice.
- Once it’s cool, fill it with butter icing.
- Divide in half down the middle, then cut each half into two parts, the top sections larger than the lower section, (a bit like a peace sign!) Swap over the two original semi-circles so that the curved edges are together. Adjust into butterfly shape by manouvering the curved sides of each segment together – See Butterfly Cake Template
- Cover each section with butter icing, one section at a time.
